Highly regarded at 2, when she was a winner at Churchill Downs, Latonia, and the Fair Grounds, Souffle was considered the best filly in the United States at 3 after defeating the best of the Eastern fillies in the Hunter Handicap and running creditably against males during the fall. She continued to be a consistent winner at 4 but at the selling-race level, apparently racing there primarily for betting purposes. After a brief campaign at 5, she was bred and then sold in-foal for broodmare duty. She achieved no note as a producer.

A good-sized, rangy bay mare who was said to have taken her size from her dam, Souffle was described as “a perfect model of power and speed.” A reluctant worker in the mornings, she handled off going well. She bled after at least one race.

Souffle was bred at Avondale Stud, Tennessee by E. S. Gardner, Jr., who raced her at 2 in the name of his Avondale Stable under the care of Jake Marklein. Prior to making her first start at 3, she was sold to James Murphy for US$5,000 and was trained thereafter by Albert C. Franklin, Jr. Following her victory in a selling race at Saratoga on July 28, 1897, Souffle was bid in by Senator Dan O'Brien for US$2,000 and was promptly resold to Tommy Griffin at the same price. She was repurchased by Murphy before her next outing. She was sold to Captain Sam Brown after a brief 5-year-old campaign and later passed into the hands of William C. Whitney prior to the birth of her first foal. She was later at Avondale Stud once more but may have been merely boarded there as she appears on a list of Whitney mares auctioned off in October 1904 following Whitney's death. Then 11, she was purchased for US$2,500 by Carl Jungbluth but apparently was acquired shortly afterward by Harry Payne Whitney, the breeder of record for her 1905 foal. From there, she went to D. W. Meschendorf's Waldeck Stud. Her last owner was George Widener. The last report of her is as the dam of the 1912 Garry Herrmann colt Indiscreet.

- Souffle met the Kentucky Derby winner of her year, two-time American champion Ben Brush, in a mile race at Sheepshead Bay on August 18, 1896. Ben Brush finished first by a neck but was disqualified to last due to rough riding by his jockey.
